I was originally given this recipe at school and I have yet to find another recipe for muffins that I prefer because this one is so simple and the ingredients can easily be altered to make any variation of flavours/fillings.
Ingredients
Recipe
- Sieve flour, baking powder and spices into a large bowl
- Add rest of the dry ingredients to bowl and mix well
- Beat together all liquid ingredients in a small bowl
- Pour the liquid ingredients into the large bowl and stir until fully combined
- Line a muffin tin with cases
- Spoon the mixture into the cases leaving about a 1cm gap from top
- Place in a preheated oven at 200°C or 392°F and bake for 20 – 25 minutes or until well risen and golden
